Tiramisu Waffle Cookie Parfaits
2 tbsp coffee liqueur
1 cup (8 ounces) mascarpone or cream cheese
1 1/2 cups whipped cream topping
1 1/2 cups powdered sugar
1 tsp vanilla or coffee extract
1 bag Stroopwafels (waffle cookies), crumbled
Beat cheese and sugar with a hand mixer until smooth. Mix in extract and liqueur. Gently fold whipped cream into cheese. Transfer filling to a zip lock bag. Chill in a refrigerator until time to serve.
To make parfaits, cut the tip of one end of the zip lock bag to create a piping bag. Pipe mousse into a tall glass to fill about 1/4 way. Add crumbled waffle cookies to fill about 1/4 way. Repeat with mousse and top with cookie crumble.
Serve immediately or return to fridge to chill until ready to serve.
Skinny Waffle Fruit Salad
1 1/2 cups whole wheat flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1 egg
1 1/2 cups milk
1/3 cup extra virgin olive oil
Preheat iron waffle iron.
in a large bowl combine the flour, baking powder, salt and sugar. Whisk together. In a separate bowl, whisk together egg, milk and oil. Add wet ingredients to dry and still until combined. Do not over mix. Cook waffles per waffle iron instructions.
Serve warm with fruit of choice.
Double Chocolate Breakfast Waffle Bread Pudding
2 eggs, slightly beaten
1 chocolate shake
1 teaspoon ground cinnamon or nutmeg
1 teaspoon butter
6 frozen waffles, toasted and chopped in cubes
1/8 cup dark chocolate chips
2 teaspoons confectioners’ sugar for dusting
Heat oven to 350ºF. In a medium bowl, whisk together eggs and chocolate shake. Whisk in cinnamon.
Grease 8 x 8-inch glass baking dish with butter. Add waffle cubes. Pour egg mixture over the bread. Mix gently to make sure all waffle cubes are covered in egg mixture. Sprinkle in chocolate chips. Bake uncovered 20 minutes or until knife inserted 1 inch from edge comes out clean.
Dust with sugar and serve warm.
Cereal Waffles
2 cups all-purpose flour
1/4 cup sugar
4 tsp baking powder
2 eggs
2 cups cereal milk*
1/2 cup oil
1 tsp salt
butter cooking spray
Combine flour, baking soda, baking powder, salt, and sugar in a large bowl and whisk until combined. Whisk together eggs, cereal milk, and oil. Pour wet ingredients into dry and mix until just combined.
Cook waffles per waffle iron instructions.
Serve warm topped with cereal and whip cream.
Cereal Milk*
2 cups cereal of your choice
3 cups milk
Combine milk and cereal in a pitcher. Let steep for 20 minutes. Strain the ingredients through a fine mesh strainer collecting the milk in a large bowl. Squeeze soft cereal with a spoon to drain help drain milk absorbed by cereal. Discard cereal and transfer milk to pitcher. Refrigerate until chilled. Serve over ice or with cocktail.
Bacon Scallion Waffles
2 cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 1/2 tsp salt
2 tbsp sugar
3 eggs
2 cups milk
2 tbsp melted butter
8 strips bacon, cooked until crisp, crumbled
6 ounces freshly grated cheese (optional)
6 scallions, thinly sliced, plus more for garnish
maple syrup
Combine flour, baking soda, baking powder, salt, and sugar in a large bowl and whisk until combined. Whisk together eggs, milk, butter. Pour wet ingredients into dry and mix until just combined. Fold in bacon, cheese, and scallions.
Cook waffles per waffle iron instructions.
Serve warm with syrup.
