Spicy Pumpkin Soup

Directions
Heat butter in a large pot over medium-high heat. Add garlic and shallots and sauté until fragrant. Add stock, puree, curry powder, cumin and thyme. Reduce heat to medium. Simmer uncovered for 25-30 minutes. Remove from heat.
Blend soup in batches until smooth. Return soup to pot over low heat. Stir in cream and cover. Simmer for 10 minutes.
Serve warm garnished with pepper flakes and/or crème fraîche.
